I have a love-hate relationship with sub shops! Typically, I opt for a salad but I really want to run out of there with loaves of bread packed full of tasty meats and hot melty cheese. Well today I came to a compromise (I do that a lot with cravings 🙂 ).
The stuffing in this pepper was so tasty! It reminded me of grilled turkey sandwiches I would get from a small deli during my college years. I wish there would have been leftovers because I would have loved to used it in the morning in an omelet. Maybe next time!

This is my favorite time of the year! Minus the allergies that tend to go crazy with the dead moldy leaves…. I love the way nature looks, I love the food, and of course, I absolutely love Halloween. My kids may not have the best holiday clothes but when it comes to costumes we go all out. Except my son wants to be the same thing he was last year, I guess I’ll survive, he looked so darn cute anyways!
My husband promised after the camping trip this weekend we could get out all of our fall decorations. Today I had to run out to get some supplies for a project my son is dong in school. He has been assigned to decorate a letter H with items that start with the letter H. For the longest time hair was the only thing that came to mind. Then with all this Halloween talk, I couldn’t think of anything better than to do a Halloween themed H. My husband argued that bats and pumpkins don’t start with H. I said (and rolled my eyes) that it still works if he explains that it is Halloween and anyways, it is Kindergarten! So while out in the Halloween isle of the dollar store, I could help but grab a few inexpensive items to add to our existing fall decor.
Cute huh? I think every office needs a dancing skeleton!
Now for a fall dish! Remember not long ago when I made crockpot chicken with a beer for it to cook in? If not glance back here. I was so impressed with the favor, I wondered how it would do with other meats. So I tried it. I have made a few pork roasts in the past and they were good but not great. I searched around the web for some ideas to see if people had any success. Lots of people suggested dark beer but the also added lots of other stuff to their dish. I went for simple with my fingers crossed.
Yum! Yum and easy!!
This pork was tender and juicy! There was hardly any real shredding involved because it fell apart.
Here is what I used:
1 pork roast completely thawed, I also hit mine with my meat tenderizer after it was thawed
1 amber beer (I used Blue Moon Carmel Apple! It is a fall special!)
2 cloves garlic minced
Beef bullion (the powder type 1 tbsp)
(I added carrots and onion but didn’t like how they turned out, maybe I should have precooked them or something??)
In a crockpot, I added the thawed roast with garlic and bullion on top. Pour beer over meat and set my slow cooker on low. Cook until meat is completely cooked through. It should just fall apart when you pull it out. Shred and top with your favorite BBQ sauce. Bun is optional. Even my super picky son gobbled this up!
Anymore, people seem to be avoiding flour like its a plague. For some, who can’t have gluten, it might be like a plague 🙂 Although I don’t avoid it entirely, I have tried to scale it back…some. For years I have heard of the idea of substituting cauliflower for traditional pizza crust. Finally it was this post,that made me decide to try it out. She did not steer me wrong.

The other day I went over to visit a dear friend of mine. She told me she was making stir-fry and asked if I wanted some. I opted out since I had just ate dinner. (Although that didn’t stop me from indulging in a spoonful…or two…of crunchy Biscoff!) When she plated her meal, it looked amazing! However it looked a little different from my typical stir-fry, no rice?? And then I thought about it and said to myself…genius!
Naturally, the next day at the grocery store I got all the ingredients to make this dish right away!
