Birthday Fun


You know your birthday has been fun when your ready for the Monday routine of a salad and a long run to return. Until then, I’m enjoying every moment although I might only fit into sweat pants. So what have I been up to? Well I’ll show you and you can tell me if you see any patterns.

Pumpkin Chili! Send me a link if you know a good recipe for this! It was fantastic!

Pumpkin Fudge! Just a tiny pinch of this and your taste buds will love you.

Pumpkin Doughnut! This may have been at the top of my list next to the pumpkin cheesecake that didn’t last long enough for a picture. I will never try to make my own pumpkin doughnut because you can’t beat perfection!

Pumpkin Latte, if you never have had this, go now! Have you seen Starbuck’s new coffee makers?? I so want one!!! Bad!

Wine tasting! This was a blast!

Poblano and Goat Cheese Bacon Burger! Holy cow, this is one of the best burgers I’ve ever had! The bacon had a thick maple glaze which gave the burger an awesome combo of sweet and salty! I look forward to trying to make something like this at the lake next summer!

Costume shopping, yes hanging out my kids made my day! He passed up the angry bird costume however to be this character instead!
In case your worried about me having sugar intoxication, I’ll be honest enough to say that I’ve enjoyed some of these treats over the past few days, but I probably have had more junk than any one person should have!
So how shall I repent?

WHAT THE WHAT!! I’m so jacked up excited to try this out!!! It took everything out of me to not buy every bottle on the shelf!! at only 40 calories per serving…I probably should have! By the way, I found this lovely at Walmart! I’ll be sure to blog a little salad idea I have in place for this gem!

Three Years Later


So years ago, three actually, I ripped this recipe out of a magazine to save in my recipe book. Clearly, this was before I had ever met the totally addicting Pinterest! I kept this recipe with intent of making it for a friend’s birthday! I did not intend for it to take three years.

The wait, although unnecessary, may have been worth it!

Pizza Rolls!


Can you smell it? Fall is near. Not too near, but close enough that my stomach is remembering pumpkin lattes and football parties. Yes, the time where grown men cry because their favorite team lost. Ok not every man, but you know, that guy who gets a little…intense at the party. If that is you, that’s ok, just blame it on the booze and your friends will forgive you in the morning. 😉

Practice Run and a Promise

I had promised some people I work with that if they helped me out with a project, I’d bake for our next meeting. They were wonderful, so now it is time to pay up!
Between you and I, it also gave me a chance to try out a cupcake idea for my daughter’s birthday!
I like to refer to these cupcakes as Strawberry Sundaes!
Want to know what the little something extra is in them?

Berry Burst Ice Cream Oreos!
For the record, I only made enough for the team and the family to try one out, that way I don’t eat a batch of them in a night! I did have a taste however, and they were exactly how I had hoped.
Yes, I’ll confess, I totally cut corners with this recipe. I used a strawberry flavored cake mix and icing from a can (it’s Tuesday and I worked all day, cut me some slack). For my favorite homemade icing recipe, click here.

So what do you need to make these?
Vanilla icing
Strawberry cake mix (any water, oil, eggs indicated on box)
Berry Burst Ice Cream Oreos
Cupcake liners

Super simple!
1. Preheat oven to 350.
2. In a cupcake tin, add cupcake liners and add an oreo to each cup.

3. Combine ingredients for cake batter as directed on box and fill cups with mix.

4. Bake for around 18-20 minutes or until cake is cooked through.
5. Once cupcakes are cooled completely, ice and add whopper.
6. Enjoy or resist! Whatever is your thing!!

Cilantro, Black Bean, Corn Salsa 🙂



Of course it is fantastic on a chip, but don’t underestimate how versatile it is!


I actually also had this on a bed of romaine with some grilled chicken. Unfortunately, I didn’t think to take a picture of that dish until after I inhaled ate it.

Don’t be fooled though, this is an awesome side dish on its own!

What is all of this vote talk?
Danny at Danny’s Kitchen, is having a fun contest called, “the great leftover challenge.”

What is it? Basically readers were asked to submit a dish that was created based on leftovers. Initially, I wanted to create something, but my mind went blank. While rummaging through my fridge I had an epiphany, and came up with this dish! A friend of mine introduced me to corn salsa. I. Love. It. Looking around my fridge I thought, why not expand on it!

So what’s in this salsa?

Here is what I used:
1 bag frozen white corn, totally thawed and pat dry with a paper towel
1 bag yellow corn, also thawed and dried
1/2 red onion, thinly sliced
1 container of yellow cherry tomatoes, halved (red would be ok too)
1 can black beans, rinsed and drained
1 avocado, diced (read below before cutting)
2-3 tbsp jalapeño peppers, minced
1/4 cup olive oil
2 tbsp sweetened lime juice (I use Rosie’s found in liquor isle at larger grocery stores)
Salt to taste

I can’t stress how important that the corn is thawed and dry.

1. Mix all ingredients except avocado.
2. This makes a large batch, if serving all at once, stir in avocado right before serving. If you are having a little at a time, I would only use what you will eat right away.
3. This dish continues to get better as it hangs out in the fridge, so feel free to make it hours or a day ahead of time!

I’d like to thank Danny for giving me the idea on how to use my over abundance of frozen corn (apparently I buy a bag everytime I’m at the store?), that lurking can of black beans, and the near death avocado!
